Mead's a lot of fun to make. One thing I've noticed is that depending on the honey (and some other variables) you'll get very different results.

Don't forget to put some aside and try it 6 months to a year from now. It'll go through a phase when it's funky, but it will eventually mellow to a nice wine-line feel.
