    I'm willing to share thanks to Helia, who, though not the original butter cookie donor, came through with some butter cookies that were equally wonderful.... let me have another one, they might be even better than the original batch...

    These are one of my favorites because they meet the need for something sweet and tastey and are very easy to make (and they are very hard to ruin too).

    Soooooo...they don't rate up there quite with creme brulee or a chocolate souffle with Grand Marnier sauce. Hey! What do you want for so little effort?

    I got the recipe from my friend Nancy's Uncle Tomoso and so I call them...


    Uncle Tom's Butterscotch Brownies

    Makes 16 brownies

    Pre-heat oven to 350 degrees and butter a 9 inch cake pan

    Mix together, till well combined, all of the following:

    2 cups packed brown sugar
    2 eggs
    1 1/2 cups flour
    2 teaspoons baking powder
    1 teaspoon vanilla

    Spread the mixture in the cake pan and bake for 35-40 minutes or till dry on top and almost firm to the touch.

    Let cool for 10-15 minutes, then cut into 2 inch squares.

    2 WORDS OF CAUTION:

    1) IF USING A GLASS OR DARK COLORED PAN DECREASE THE OVEN TEMP BY 25 DEGREES

    AND THE SECOND?

    2) IF YOU THINK YOU WANT ANY OF THESE AND SOMEONE ELSE LIVES IN YOUR HOUSE WITH YOU, YOU BETTER HIDE THEM!

    I took these to work one day and they were gone in less than 15 minutes, even though every one else was supposedly working too!
