I just made this as an experiment to see how it tastes- It is period for post 1400 europe, simple and tastes GREAT!
(I've reduced the recipe to make enough for 4, the original was more like forty.)
4 Chicken breasts of respectable size
One whole orange
I cup orange concentrate (frozen juice is perfect)
5 slices bacon (thicker is better)
10 whole cloves
pepper
Chop up one whole orange and simmer for about two hours, or until the peel softens, with 10 whole cloves. Strain and reserve the liquid.
Sprinkle a generous amount of pepper on the chicken breasts.
Fry 5 peices of chopped up bacon until cooked through, remove the bacon and cook the chicken breasts in the fat on high heat, browning both sides.
Add the orange mixture and cook on low for a half hour. Pour off the liquid. Add the orange concentrate and the bacon and cook for another half hour until the liquid is thick.
Serve with something to pour the sauce on-it's really good!
Wine-a dry citrusy white. I drank pear with it, which wasn't bad, but my homemade pear is really, really dry. A chardonnay would have been better.
