    Plantains are African in origin, but I can't guarantee this recipe is truly African. Not with the frozen yogurt!

    Anyhow:

    1 tbsp butter
    2 tbsp lemon juice
    2-8 tbsp unsweetened pineapple juice (to taste, or for moisture)
    2 ripe plantains. Peel them, chop them into large chunks.
    1/4 cup brown sugar. Pack it down.
    1/2 tsp or so of ground cinnamon.
    1/4 tsp ground cloves.
    3 tbsp rum (or extract)
    2 cups frozen yogurt, vanilla.

    Melt butter in large skillet, medium heat. Add lemon juice and 2 tbsp of the pineapple juice and the plantains. Stir. Raise to medium high.

    Sprinkle seasonings over the plantains.

    Reduce heat to simmer. Simmer for 15 min. Add more pineapple juice as needed.

    Add rum. Cook two more minutes. Serve with the frozen yogurt.

    Serves 4.
