A friend of mine bought a case of mead (12 bottles) 3 years ago for a 12th Night Celebration. Miraculously, we only drank a couple bottles of it that night and have been drinking it on 12th Night for the past 3 years. Each year, the mead seems to taste a little better than the previous year. It tastes sweeter and more mellow in flavor. It also seems to be much more potent each year! My question is: Does modern mead "age" like wine, or am I imagining things? If anyone has any thoughts about this, I'd value your input. My friends all think I've gone nuts, (more than usual) as they can't taste any difference!
