Work and real life took their toll over the past month and left me little time.
Decius, you did provide more of the answer I was looking for, so please ask the next question!
Spelt was definitely used in 'various rites', including marriage ceremonies as an offering to Jupiter (thanks to Hainrus Volumnius for this information), public rites as offerings of mola salsa (sacred cakes made from spelt flower by the Vestal Virgins), and during Foracalia (the feast of ovens) when spelt (or far) was toasted at a meeting hall and sacrificed to ensure household ovens wouldn't be burnt in the coming year.
