Ayrshire Shortbread
1 cup unsalted butter, softened
1/2 cup sugar, preferably superfine
2 cups all-purpose flour
1/8 tsp. salt
1 egg yolk
1 tablespoon cream
granulated or confectioners sugar
Cream butter, add sugar gradually, beating until light and fluffy. Stir in flour, one cup at a time, and salt, mixing as adding. Make a well in centre, add eggs and cream. Combine thoroughly until mixture can be pressed together to form ball.
Turn out on floured surface. Roll gently to 1/4" thickness keeping shape as circular as possible. With floured cutter, cut into 2 1/2" circles. Prick tops, sprinkle with sugar and
transfer to cookie sheet 1/2" apart.
Bake in preheated, 300 F oven, 10 to 12 minutes until pale gold and firm to touch. Remove at once to wire
rack.
