There are several explanations and I have to agree, I love the one of the primitive roulette wheel and that Newgrange may have been an ancient casino *G* Might be an idea to put this in one of the hoods or the marketplace, like Mac's Keltoi Fried Chicken? I read this explanation somewhere and was wondering if it was a general idea behind the interlaced patterns, so I thought to put it out here:

The interlaced patterns with their unbroken lines symbolize humankind's pilgrimage, both as a quest to return to our divine source and our spiritual growth as we move along in the quest. The pattern is to be mentally unraveled, which, while occupying the mind with a repetitive task, creates a deeper concentration enabling us "to see." In this it is akin to the use of a mantra or rosary beads.
