Rainbow Raw Fish Salad

Rainbow Raw Fish is a Chinese New Year favourite because in Mandarin, raw fish sounds like prospertity" and progress.

Ingredients:

200 g Raw Fish Fillet / Smoked Salmon
100 g Assorted Vegetables (Turnips, carrots, cucumber, leek and pomelo peel)
4 tbsp Spring Onion (shredded)
2 tbsp Ginger (shredded)
3 pieces of Red Chilli (shredded)
1/2 tbsp White Sesame Seeds (toasted)

Seasoning:

1/2 tbsp Light Soya Sauce 1/2 tsp Minced Garlic 1 1/2 tbsp Peanut Oil (heated)

Wash and clean fish fillet, dry and cut into very thin slices. Remove all fine bones. Shred assorted vegetables, mix well with 2 tbsp. of shredded spring onion and 1 tbsp. of shredded ginger. Arrange as base on the serving dish.

Arrange fish slices on the vegetable base and garnish with the remaining ingredients. Place minced garlic in a bowl and pour inheated peanut oil. Add soya sauce. Sprinkle above mixture onto dish. Mix and stir well before serving.
