Mongolian Recipe for Tsagaan Sar feast
Suutei Tsai

This delicious drink is salty tea - suu means milk and tsai is tea. This a common beverage served in little bowls with every meal.


Ingredients

1 quart water
1 teaspoon salt (to taste)
1 tablespoon green tea
1 quart milk


Preparation

Put the tea and water into a pan and bring to a boil. Add the milk and return to a boil. Instead of stirring, lift some of the liquid out with a ladle and let it splash back down into the pan. When it has boiled, add salt to taste and strain into a teapot before pouring into individual serving bowls.
